I have learned a lot more from this one nutrition class than I have from other courses on nutrition I have studied. This clas put things in a better perspective where I could see it and therefore understand it and apply it to my life. I know how to eat better, how to prepare foods, as to cooking time and methods of better cooking. And when I am in my own place I will be able to apply all of new learned knowledge to my life, including my soon to be husband, and my 24 year old daughter who love to cook. It will all be for the good. We will be choosing better foods, cooking them correctly and gaining all the nutritional benefits, along with the fantastic health benefits that come from it. I can hardly wait for the next class to learn even more!

Week 11 blog

Foods produced today are a lot lower in vitamin and mineral content because of the depleted soil that they are grown in and all the pesticides and fertilizers that are used to grow them faster.
The soil is depleted because it it not allowed to sit for a season with no crop. The field is used over and over with the same crop, which means more fertilizer and eventually a different or stronger fertilizer or pesticide, because the plant and the bug that infests it get used to the fertilizer. If the crops were rotated, using one that would put minerals back into the depleted soil, that would help. I know that some farmers do rotate and care about the soil and their crops and the health and welfare of others.
The biggest health issue suprisingly is malnourishment, even here. "Food crops gown on depleted soil produce malnourished bodies and disease preys on malnourished bodies." http://www.soilandhealth.org/
It opens up our bodies to all sorts of afflictions, cancer being the major one. All the toxins from the pesticides and fertilizers going into the food and into the soil, and into the animal, into everything we eat is not good. So we take vitamin supplements to help, thinking they're good for us, right? But most vitamins are made from petroleum by products. Once again, not helping. Instead we should look for vitamins that are made from plants. Me personally, I have looked at and tried a lot of vitamins. I have found Vitamin Code from Garden of Life. Week 10 vitamin blog

I would say in comparing the food that I ate the first week and the food I ate in the 10th week, that I am definitely eating better. I am getting a lot more vitamins from my food. I do still have my occasional lapse of course, but it's not as often now that I am more aware. I don't feel as well if I don't eat enough vegetables or fruits. And there are some days, where I don't and I can tell. I can also tell when I haven't had enough water. I tend to not drink as much water when it cools down. Thats bad for me because that is all I drink. So if I'm not drinking any water, I'm not taking in any liquids. I have found some really good milk though. I'm working up to drinking a little more of it. It's by organic valley. It's actually from grass fed cows. Oh my goodness, it tastes so good!!! They also make butter and yogurt. I've tried the butter too, its also good!
I just need to make sure and buy more vegetables and fruit.

Week 7 PH experiment

My ph in the morning for my saliva averaged 6.43 which is good and in the optimal range.
My urine ph, not so good. It averaged 5.5 in the morning.
In the evening my ph level for my urine was better, at 6.21 which is the optimal range.
So by reading the instructions, it shows that my diet is basically alkaline because the ph level in my urine increases. All though it doesn't have the optimal ph for healing because it doesn't stay between 6.1 and 7.0. So I guess I need to drink more water with chlorophyll in it. And eat more vegetables. I did notice that when I had a salad of kale and spinach in the morning, my ph at night would be a little higher. I just need to stick with it. I'm awful about it. Of course where I live doesn't help. They don't eat right. I usually eat a salad once a day. Usually at night. They only have a salad if they go out to eat. And if they do buy salad they buy the regular lettuce in a bag. It has no taste to me. Blahhh. And they don't listen to me when I try to talk to them about eating healthier. So, I try to buy my own salad makings. But otherwise I eat what they make. And usually it's something with beef. All though he does buy Lauras beef now. So at least he is trying
